That's a good question. Springform pans have the high sides needed for many ice cream cake recipes, but if you don't have one, here is an idea. Use a cake pan that is the same diameter called for in the recipe and create a 3-inch tall foil band to fit inside and wrap around the diameter of the cake pan to act like the tall sides of a springform pan. Use at least 3 layers of foil so it's sturdy and that it will stand upright on it's own. Overlap the ends of band and secure with masking tape. Make the recipe as directed. Good luck with this "in a pinch" idea!
