You can use any oil but be aware that it will impact the flavor.
Grease the bottom and sides of the pan with solid shortening to prevent sticking. Cooking spray can also be used, do not use butter or margarine unless specified in the recipe because food may stick. You could also flour the pan after greasing. Sprinkle pan with a small amount of flour and shake pan to distribute. Then, turn pan upside down and tap bottom to remove excess flour.
Beat until fluffy, means to beat or whip until smooth and air is incorporated into the cream cheese.
