I have a recipe from Bisquick from perhaps 20 years ago that I use all the time for Banana Muffins. ONLY 5 INGREDIENTS! 2 cups Bisquick, 1/3 cup sugar, 3-4 ripe bananas (mashed) 1 egg, 3 Tbs. vege oil, mix in bowl. Simple as that. Add a handful of raisins, handful of nuts (pecans, walnuts). Let the batter rest for 10 minutes, place in pan or muffins, bake @ 400 for 15-18 minutes. If you like, drizzle icing (confectioners sugar w/ milk) over the top. I even save over-ripe bananas by peeling and freezing them to make in this recipe. This is a great recipe for small children. I don't know why Bisquick corporate doesn't publicize this recipe - they created it!
