I've heard that it's not a good idea to lift off the cover of a slow cooker to check on the food or to stir it. Why is that?

Every time you lift the cover of a slow cooker while the food is cooking, you lose 15 to 20 minutes of cooking time by allowing the heat to escape. If you can't resist the urge and do lift the cover, make sure to add 15-20 minutes to your cook time.
