For the Pizza Bake, can I use pizza crust pouches instead of Bisquick biscuit mix?

If I were you I would use a recipe using the Pizza crust pouches rather than substitute it for the Bisquick. The Bisquick is a softer dough and is spooned on rather that rolled out. Try it with Bisquick, it is a favorite of ours.
