The Fudge Lover's Cream Cheese Cake looks delicious! The recipe was developed using the chocolate puddiing in the cake batter and should be used as directed. If you do not use it, the volume of the cake and texture will be affected. If you don't want to use chocolate pudding, I would look for a recipe that doesn't use it. Try this one.
