I understand your frustration when baking gluten free. We have not tried using the gluten free Peanut butter cookies. The structure of gluten free cookies is very different from cookies with gluten, which I am sure you already know! The gluten free cookies will be very tender and probably will not support the pie as a crust. Here is a recipe using the gluten free Bisquick for a crust.
