Banana breads are very moist and that is why they get sticky on top. You are doing everything right, by cooling completely. When we make Banana bread, we let it cool and then wrap in plastic wrap and then wrap in foil. Another tip would be to bake it a couple minutes longer to drive off moisture from the top surface. Here is a recipe we have had good success with.
